Summer Refresher: Fancy and Flavorful Ice Cubes Go with Sparkling Water, Lemonade, or Limeade

When the heat wave hits, here’s a festive way to serve cool drinks to guests. This recipe is easy to make ahead and dresses up any beverage, from unsweetened to sugary. Fresh lime juice and chopped mint bring out the watermelon’s natural sweetness with no need for added sugar.

Craft cocktail ice cube trays make a fun size watermelon-lime ice cube to keep your favorite beverage chilled on a hot summer day. It makes for  a cool, refreshing, low sugar drink.

Use regular size ice cube trays, specially shaped ones, or the craft cocktail size like we did. A sprig of mint leaf and tiny slice of lime in each ice cube make them festive enough for any backyard barbecue, birthday party, bridal shower, or baby shower.

Watermelon-Lime Ice Cubes with Fresh Mint
Watermelon ice cubes are easy to make ahead, and they dress up any beverage, from unsweetened to sugary. Fresh lime juice and chopped mint bring out the watermelon’s natural sweetness – there’s no added sugar.
Ingredients
  • 1/2 medium seedless watermelon
  • 2 limes
  • 1 large bunch fresh mint leaves
  • sparkling mineral water, lemonade or limeade, chilled
Instructions
1. Juice one lime. Cut the second lime into quarters, and slice the quarters very thin. 2. Wash and dry the mint leaves. Reserve enough small, whole leaves for ice cube tray garnishes. Remove remaining leaves from stems and coarse chop. 3. Wash the watermelon and cut in two. Remove the rind from half and reserve the rest for another use. Cut the trimmed watermelon into medium chunks. Place half, or up to the maximum liquid line, in a food processor or blender. Add half of the lime juice and a small handful of the chopped mint. Process until the watermelon is pureed. Remove any remaining large pieces and put in the next batch to be pureed. 4. Place a mint leaf in the bottom of each ice cube section. Fill each 3/4 full with watermelon puree. Place a lime slice on top of each and fill to the top with puree. 5. Repeat step 3 – puree the remaining watermelon, lime juice and another handful of chopped mint. Garnish and fill another ice cube tray. 6. Cover and freeze the ice cube trays for at least 8 hours or overnight. 7. To serve, place several ice cubes in a glass. Pour over with sparkling mineral water, limeade, or lemonade. 8. Freeze unused ice cubes for up to 2 weeks.
